Americans have discovered what Italians and other Europeans have known for centuries: Olive oil tastes great and research indicates that it's good for you too.

Over the past 20 years, the United States has become one of the world's leading olive oil consumers. Every year we consume 20 percent more, and nearly every drop comes from overseas. Even California, which boasts a multimillion dollar olive industry, contributes only a trickle to the US olive oil demand.

A handful of Texas Pioneers are developing the olive oil industry in Texas. While not one of the first, Texas Hill Country Olive Company has joined the ranks of these pioneers to build this industry in Texas. We will create jobs and commerce, which will benefit our local community, the state, and even the national economy, as we develop and grow our farm. The growing of olive trees and production of olive oil as a major part of a society's food source cannot be underestimated, as this agricultural food source has been a major industry for thousands of years in Europe and the Middle East.
