All of our groves are farmed using organic methods. Our aim is to respect the beauty of the land we farm and to live in harmony with nature. We can only live up to that credo by being organic and using sustainable farming methods. We’re not a commercial, high-density grower and never plan to be.
Organic farming means a lot of extra work. We have to take more care pruning and make sure we keep the grove tidy and the grass cut to ward off diseases. We also need to keep an eye on the pesky bugs that sometimes try to get into the ripening olives – this might mean harvesting a bit earlier, when the oil content of the fruit is lower. Without the addition of growth-enhancing chemicals, organic farmers tend not to get the big yields that large commercial growers do--but organic farming presents a classic case of quality over quantity. The yields might be lower, but you know every molecule you are eating is 100% natural.
Worried that we’ll run out of olive oil? Don’t be! The olive industry in Texas is very young and while olive trees thrive when given lots of love, sun and organic compost they take awhile to reach their full potential. How do we keep up with the demand for our olive oil? We have sister orchards to the West and South of us that grow the same types of trees we do, use sustainable and organic farming practices and are committed to quality and integrity. We know our farmers personally and visit their orchards often. You can be sure that the olives that make up our oil are 100% USA grown, are grown using organic methods and that our oil is never cut with fillers such as peanut or palm.
